Help Wanted

Charleston Battery
 
We are looking for someone to be our mascot, Cannonball, for the 2012. If you are interested please email whitney@charlestonbattery.com.
Sounds like an intersting job of sorts. Not that I am going to apply as I really do not know how to act like a Battery. However, if I did the commute would kill me. If I got the job I would get a battery powered car and learn the role on the way to work.
Speaking of, I have gone off the deep end. I am in a book club but I am currently enjoying another book and would like to finish it. In the mean time, I have added our current book club book to my IPOD and I listen to it while walking the dog or sometimes when running. It doesn’t feel like reading and the book gets read. Lets see how comprehension goes.

Newt Gingrich said something I can’t argue with.

Gingrich pointed Wednesday to a proposal he made early in his career, which would have allowed American residents of the moon to petition for statehood when they reached a population of 13,000.

Sounds like a solid plan to me. I know one thing he never figured was where they would put the 51st star on the flag. Or it would be 50 stars and a Moon. That would end up bugging him.

Cleaning out The Frig (Veggies Beware)

I made #Vegan Lentil soup last night that probably did not have enough Lentils. We were out of most staples so I sauteed finely chopped celery, carrots, and diakon in a little olive oil. Added some Braggs and one vegetable Bullion cube that was in the cabinet. I believe I added a little brown sugar, curry powder, pepper and stirred it all with a stalk of lemon grass. Close enough for Clean out the fridge day as who knows what will be in stock the next time I do this. I added potatoes, Kale, red and green lentils and rice.

It was pretty darn good. That’s my job sometimes, cleaning out the Frig and getting dinner ready. I like it because I don’t have to follow a recipe.

To add to the challenge our BigBlackBearPup was running amok. Cooking with a puppy in the kitchen is quite the challenge.

If Evolution failed

If humans had never existed, what would the earth look like now?

My guess is it would have a lot of trees. And those trees would get together and mess everything up. Probably emitting too much CO2 into the air. But who would be around the regulate the trees. One day a tree would die in New Jersey and wash out to sea and land in South Carolina. Where they would have slave trees. I would like to be a fly on the wall for that lack of conversation.

The mushrooms would be worried about having humans grow in their yard. Ivy would call poison ivy human ivy. There would be no #vegans.

My Humble Opinion -Thou shall not

I love this quote so much, however I have to take it one step farther. War is murder and we as a society seem pretty split on this issue. There are many people who view war as the right thing to do. Which of course leads to mass murders. This of course leads to the interpretation of the definition of the word Murder. And most of us agree that means taking another person’s life.

We have a little more control about killing animals. We can simply insist in our everyday lives not to do that. That’s why a vegan life style is logical and a resistance to violence makes sense in the long run.

Tofu Banh Mi

One of the best dishes we had ever made. We pretty much followed the recipe exactly. (We did double up on the marinade). We had hoped for leftovers but that did not happen. I can see us repeating this often. It appears the peppers would be over whelming however they were not.

This ingredient list looks long for a sandwich, but it’s just a list of all the yummy fillers…and their marinades.

Tofu Banh Mi

1 baguette
1 block firm tofu, drained
¼ cup soy sauce
½ cup, plus 3 tablespoons rice vinegar
2 cloves garlic, crushed
1 stalk lemongrass, diced
2 tablespoons vegetable oil
½ lb daikon, shredded
1 carrot, shredded
1 tablespoon sugar
½ teaspoon salt
1 jalapeño, thinly sliced
½ red onion, sliced thinly
1 bunch cilantro
lettuce
mayonnaise (can substitute vegan mayo)

  • Combine soy sauce, 3 tablespoons rice vinegar, garlic, and lemongrass in a container with a lid. Slice drained tofu into ¼-inch slices and place in soy sauce marinade, turning container upside down to coat the tofu. Marinade tofu in refrigerator for at least one hour, or overnight. In a large skillet over medium-high heat, fry marinated tofu in oil until browned on each side, about four minutes each side. (Save any leftover marinade to brush on inside of baguette)
  • In a small bowl, stir together ½ cup vinegar, salt, and sugar, and toss with shredded carrot and daikon. Let marinade for 15 minutes, then drain.
  • Meanwhile, heat split baguette in oven, about 5 minutes.
  • Assemble the sandwich: Brush inside of baguette with soy sauce marinade. Top bottom layer of bread with jalapeño, onion, cilantro, tofu, slaw, and lettuce. Spread mayonnaise on the top layer of bread.
  • Slice the sandwich crosswise into fourths, and serve.
